Professional lobster fishers along the South East coast are currently benefiting from an improved beach (wholesale) price of $55 per kilogram and mostly favourable conditions for fishing.
The 2021/22 season opened almost three months ago with the initial return to the 160 boats being $70.
Since then, the price has peaked at $87 and dropped to as little as $30 a kilogram.
There was a spike in demand to coincide with the running of the Melbourne Cup and a similar lift is expected for the celebrations to mark Christmas and New Year.
The domestic market in Adelaide is currently charging retail customers $78 per kilogram.
A surge is expected in recreational lobster fishing along the South East coast over the coming festive season but this will be weather dependent.
